Item Name: Small Dried Scallops / Yuan Bei Gan Bei / Conpoy / 青島乾貝 Description: The item is dried small scallops. It’s a gread addition to any soup or stew. There may a little white color on the product due to salt because it is seafood. Preparation and Uses Dried scallops can be added as is to soups and long-cooked ‘wet’ dishes like casseroles but, generally, they need to be first softened by soaking. Dried scallops lend a distinctive sweet sea salt flavor to any dish. It can used immediately to give additional depth to the same dish to which the soaked scallops are going to be added (it is lovely for sauces), or else it can be reserved and then added to other soups or stocks. To soak, you simply need to just cover the scallops with water and leave until softened. The length of time will vary depending on size and initial dryness, but anywhere from about 30 minutes to an hour or two will usually suffice. Once softened, the flesh can then be shredded into thin fibers to be put in to soups, congee, stews, steamed egg, and various other dishes. Make sure to retain the soaking water as it will be highly flavorful and can be added to whatever you are cooking. Storage: Store in a cool dry place.
