CLOVES are the unopened buds of an evergreen tree. Their Latin name, clavus, means «nail.» They have a strong of aroma and hot and pungent in taste. In the USA, we use whole cloves primarily to stud ham or pork roast. Ground cloves are used in desserts, cakes, pies, custards, and liqueurs.
