Lighter and fluffier to its yak and cow cousins; Goat ghee offers the same healthful properties and retains its distinctive tart and earthy notes found in most goat cheeses. Most cow milk genetically contains both the A1 + A2 casein proteins, but goat milk is unique in that it only contains A2.
