Stuff into 22-26 mm collagen or sheep casings, tie/twist into 8-10″ links. Refrigerate overnight to cure. Next day hang in smokehouse or oven & smoke/cook in usual manner until internal temp reaches 160 degrees F. Remove hang at room temp until cool to the touch.
