This product is the groat of a buckwheat plant. Simply grind with stone or other tools and you have fresh buckwheat flour. Flour for long term storage is difficult. but the plants natural protective groat helps this problem. Along with that we ship the item in a 7 layer mylar bag with nitrogen. the nitrogen displaces the oxygen and thus increases shelf life.
